Fall Pumpkin Treats to Enjoy

Since fall has arrived, so have the days of pumpkin spice lattes and other treats. It can get difficult to immerse yourself in the mood of the season when the weather isn’t cold, but enjoying fall treats can make up for that a little. In this week’s Willington Lakes Phase 1 Blog, we’ve got a few fall food suggestions for you to try!

Pumpkin Spice Hot Chocolate


  • 2 cup milk (preferably whole)

  • 1/2 cup pumpkin puree

  • 2 teaspoon pumpkin spice

  • 1 teaspoon pure vanilla extract

  • 2/3 cup white chocolate chips

  • Whipped cream, for serving

  • cinnamon-sugar, for sprinkling

  • Cinnamon sticks, optional


Combine milk, pumpkin puree, pumpkin spice, and vanilla in a medium saucepan. Whisking occasionally, heat the mixture until it comes to a simmer. Stir in the white chocolate chips and cook until the chips are melted. Remove from heat.

Ladle into mugs then top with whipped cream and sprinkle with cinnamon sugar. Garnish with cinnamon sticks, if desired.

Caramel Apples


  • 1/2 cup butter, cubed

  • 2 cups packed brown sugar

  • 1 cup light corn syrup

  • Dash of salt

  • 1 can (14 ounces) sweetened condensed milk

  • 1 teaspoon vanilla extract

  • 10 to 12 popsicle sticks

  • 10 to 12 medium tart apples, washed and dried

  • 1 cup salted peanuts, chopped


To make the caramel: melt butter; add brown sugar, corn syrup and salt in a large saucepan. Over medium heat, cook it until it comes to a boil for about 10-12 minutes. Stir in milk until the mixture is thick. Remove from the heat; stir in vanilla.

Insert popsicle sticks into apples. Then dip them into the hot caramel mixture. Turn to coat. Dip bottom of apples into peanuts. Place on greased waxed paper until set.
